Okay, I’ll admit this doesn’t do my daughter’s teacake much justice, but she has been baking so fast that I am struggling to keep up with her racing through the Australian Women’s Weekly Baking Collection. In fact she already has a plate of strawberry biscuits waiting for me, and they are covered with a swathe of tempting white chocolate …

But … I digress … the apple custard teacake looked gorgeous with its tidy circle of apple slices and sugar cinnamon topping. Inside was a layer of custard – always a favourite with my husband.

I have to admit that I particularly enjoyed it the next day, warmed up in the microwave and served with a scoop of vanilla icecream while I curled up on the couch. There is nothing quite like a sneaky serve of leftovers …

I can’t tell you how proud I am to have a gorgeous teenage girl in the house setting herself a challenge like this. I may have to get a bit more exercise to balance the yumminess though …
